Here I have a couple very simple dining chairs. I'm pretty sure what I would do, but what approach would the rest of you take in cushioning the seat and sides of seat?

This is viewing the seat upside down. First webbing was used over the springs. Then, 1/2"foam. Then, 2"foam. 1/2" foam around the edges, thin layer of dacron, and then the finish fabric.
No burlap over webbing, and yes, the foam punched through.
The photos are difficult to see what you had. I try to follow what existed prior. When it's all new materials without changing the substrate you'll have rebuilt the seat without causing any changes the customer will notice. Work with new rubberized webbing, foam, cotton, and dacron covering.... to be pulled down over the sides the sides.

The frames were absolutely toast so I told the customer it wasn't worth it.
