Smokey Brisket

1)    3 ½ - 4 pound beef brisket

½ cups bottled chili sauce

2 TBS liquid smoke

1 TBS steak seasoning ( I use McCormick Montreal )

1TBS Worcestershire sauce

1tsp garlic salt

1 ounce dried morel mushrooms, optional. I do not use them.

2 large onions coarsely chopped. Don't use them either!

12 ounce bottle of beer or 1 ½ cups apple juice or cider. I use beer!

1 ½ cups bottled barbecue sauce.  I use  KC Masterpiece original

Ciabatta rolls or French rolls or whatever you want.

Trim fat from brisket. Place meat in a large zip top bag that is set in a large dish. In a small bowl combine chili sauce, liquid smoke, steak seasoning, Worcestershire sauce and garlic salt. Spread over meat covering all sides well. Seal bag and marinate 8-24 hours. I do 24.

If using the dried morels, cover with hot water and let stand for 20 minutes. Drain and rinse twice. Squeeze out excess moisture, and slice.

Transfer brisket and marinade to a roasting pan. Top with mushrooms and onions. Pour beer over.

Cover with foil and bake at 325 for 4½ hours or till tender. Uncover, pour barbecue sauce over meat. Bake uncovered another 30 -40 minutes or till sauce is hot Remove meat and slice and put back into sauce.

Serve on rolls.

Enjoy

Hot Beef Sandwiches

3-4 pound rump roast or sirloin tip
1 package Italian salad dressing mix (dry)
1 package Au Jus Gravy mix (dry)
1 can beef broth.
put roast in crock pot.
Mix other ingredients together and pour over roast.
Cover and cook on low 8-10 hours. Turn roast over half way through.
When done, remove roast and shred. Return roast to juices. ( I take some of the juice out for dipping) Serve on crusty rolls or ciabatta rolls.

This is soooo good. So easy.
Enjoy
